Mint & Cilantro Chutney


Ingredients (makes 3 - 4 cups)


2 bunches of cilantro, chopped

1 bunch of mint (stem removed)

1 1/4 cups toasted peanuts

8 - 12 serrano or Thai chili peppers

1/4 cup lime juice

2 tbsp salt

1 tbsp sugar

1/2 tsp Chaat Masala Powder (Optional)

1 tbsp cumin seeds

2 cups water

4 Tbsp chopped sweet onions (optional)

Place all the ingredients except cilantro and water into the blender. It is not possible to make a smooth blend of the  tough ingredients by adding all the water at this stage. Also, adding the cilantro would over crowd the blender.

Blend on high speed by slowly adding 1 cup of water.

Add the cilantro and 1 more cup of water, blend to a smooth puree.

Taste and add a few pinches of salt or sugar if need. This can be stored in the freezer for up to 6 months. Thaw at room temperature 5 - 6 hours before serving.
