Tofu Satay with Peanut Sauce
A vegan version of the popular chicken satay
Ingredients (Serves 6)
For the Satay
2 blocks of extra firm Tofu
3 – 4 Thick Pineapple Slices
2 handfuls of vegetables to grill (Zucchini, Red Bell Peppers work well)
12 – 14 wooden skewers
For the Marinade
1 Cup of Soy Sauce
1/3 Cup Fresh Lime Juice
1 tsp Ginger Paste (can use ½ tsp ginger powder)
1 tsp Garlic Paste (can use ½ tsp garlic powder)
½ tsp Freshly Ground Pepper
½ tsp Red Chili Flakes (Optional)
For the Dipping Sauce
3 tbsp of Peanut Butter
½ tsp Salt
½ tsp Light Brown Sugar
3 tbsp chopped shallots (can use Red Onions)
3 tbsp Fresh Lime Juice
3 tbsp Coconut Milk
1 – 2 Thai Chili Peppers, finely chopped
1 tbsp chopped Cilantro
Method
1.Blend all the ingredients of the dipping sauce smooth in a blender. Add a couple of spoons of water if a thinner sauce is desired. Chill the sauce
2.Prepare the marinade by mixing all the ingredients in a whisk
3.Soak the skewers in water
4.Slice each Tofu Slab horizontally into 2 slices. Slice Zucchini into 2” disks, slit bell peppers into 2 pieces. Remove the curvy top and bottom part of the peppers. Place only the Tofu in a 2” deep tray and pour the marinade over the Tofu. Do not marinate the pineapple and vegetables. Let the Tofu marinate for at least 30 min turn once in between.
5.Heat the Grill (Grill Pans work the best), brush the Grill Pan with peanut or canola oil. When the pan starts to smoke, place the Tofu Slices and reduce the heat to medium high. Grill each side until golden brown grill marks are formed. Set the Tofu on a cutting board. Do not discard the marinade.
6.Dip the pineapples in the marinade for a few seconds and grill them on both sides. Repeat the same process with Zucchini and Bell Peppers.
7.Cube the Tofu in to large pieces. Also cut the pineapples and peppers to skewable size pieces. Skew the Tofu, Pineapple and the Vegetables on the Skewers and set aside.
8.About 3 minutes before serving, heat the grill pan to high heat and place the Skewed Tofu & Veggies on the grill, turn the skewers every few seconds until the Satays sizzle. Serve immediately with the dipping sauce.
